This Chicken Pot Pie Soup is the ultimate comfort food, bringing all the cozy flavors of a classic chicken pot pie into a rich and creamy soup. It’s hearty, satisfying, and perfect for a relaxing weekend meal. Plus, it pairs beautifully with fresh biscuits for dipping!


INGREDIENTS

  • 1 Rotisserie Chicken, meat removed and cut into cubes

  • 1 Cup Carrots, chopped

  • 1 Cup Frozen Corn

  • 1 Cup Frozen Peas

  • 1/3 Cup Unsalted Butter

  • 1 Yellow Onion, minced

  • 1 Stick Celery, sliced

  • 2 Cloves Garlic, minced

  • 1/2 Cup Sourdough Starter

  • Or, 1/3 cup flour

  • 3/4 teaspoon Salt

  • 1/4 teaspoon Black Pepper

  • 1 Pinch Nutmeg

  • 1 teaspoon Fresh Thyme

  • 1 Tbsp Creole Seasoning (extra kick)

  • 6 Cups Chicken Broth

  • 2/3 Cup Whole Milk (or heavy cream for extra creaminess

INSTRUCTIONS

  1. Cook the Veggies: Place the carrots, corn, and peas in a pot with just enough water to cover them. Heat over medium heat until soft, about 15 minutes. Drain and set aside.

  2. Prepare the Base: In a large Dutch oven or pot, melt the butter over medium heat. Add the onions, celery, and garlic, cooking until translucent, about 3 minutes.

  3. Add Flavor: Stir in the salt, pepper, nutmeg, and fresh thyme, cooking for about 30 seconds to release their aromas.

  4. Create the Creamy Broth: Slowly add the sourdough starter, stirring to incorporate. If you do not have a sourdough discard/starter, use flour instead. Next, pour in the chicken broth and milk, stirring frequently until bubbly.

  5. Combine Everything: Add the cooked chicken and softened veggies to the pot. Bring to a boil, then reduce heat and let simmer for 20 minutes, allowing all the flavors to meld together.

  6. Serve & Enjoy: Ladle the soup into bowls and serve with fresh, warm biscuits for the ultimate cozy meal.
