INGREDIENTS
4-5 lbs boneless, skinless chicken thighs (or breasts)
1/2 cup olive oil
1/2 cup orange juice
1/4 cup lime juice (about 3 limes, squeezed)
1 medium onion, chopped
8 cloves garlic, minced
1 Tbsp achiote spice
1 Tbsp cumin
1 Tbsp salt
2 tsp paprika
2 tsp oregano
1 tsp black pepper
1 tsp chipotle pepper spice
INSTRUCTIONS
1. Marinate the Chicken
In a large bowl or resealable bag, mix together all the ingredients. Add the chicken, ensuring it’s fully coated in the marinade. Cover and refrigerate for at least 8 hours, or up to 24 hours for maximum flavor.
2. Grill the Chicken
Preheat your grill to medium-high heat. Remove the chicken from the marinade and grill until the internal temperature reaches 165°F (about 5-7 minutes per side, depending on thickness). Let it rest for a few minutes before serving.
Alternative Cooking Methods:
Air Fryer: Preheat to 400°F and cook for 8-10 minutes, flipping halfway through.
Stovetop: Heat a pan over medium heat and cook the chicken until the internal temperature reaches 165°F, about 5-7 minutes per side.
