Easy Pot Sticker Soup

INGREDIENTS

1 Bag of Frozen Pot Stickers (12-16 pieces)

6 Cups of Chicken Broth

2 Tbsp Soy Sauce

1 Tbsp Hoisin Sauce

1 Tbsp Rice Vinegar

1 tsp Sesame Oil

2 Cloves of Garlic, minced

1 - 1" Piece of Ginger Root, peeled and thinly sliced

2 Green Onions, chopped

1 Cup of Bok Choy (Green Parts), roughly chopped

1 Carrot, julienned or shredded

1-2 Cups of Mushrooms, sliced

1 Tbsp Chili Paste (more or less based on how spicy you want this soup)


INSTRUCTIONS

  1. Pan fry the pot stickers by adding a little bit of oil to a Dutch oven over medium heat. Brown each side and then remove and set aside.

  2. To the same pot, add in the Sesame Oil, Garlic, and Ginger. Sautee for about a minute.

  3. Next, add in the Soy Sauce, Rice Vinegar, Hoisin Sauce, and Chili Paste. Stir well until well mixed and fragrant.

  4. Add in the Chicken Broth and bring to a boil.

  5. Once the mixture is boiling, add in the vegetables (Bok Choy, Mushrooms, and Carrots). Reduce heat and simmer for 5 minutes.

  6. Add in the Pot Stickers and cook for another 2 minutes.

  7. Serve with the Green Onions and Enjoy!


    This soup was incredibly comforting and exactly what my family needed after a period of illness. The recipe is simple to prepare on a weeknight because it requires minimal time.
